Instructions
What to do with your KLAUWE:
Fire up your KLAUWE and bring the temperature to about 200 degrees Celsius. When lighting your KLAUWE, oxygen is essential, so open the air vents at the front and back completely. The lid should be off your KLAUWE. Once the fire is well lit, place the fire basket on the lowest level (level 5 from the top) and the grill grate on level 2 (from the top).
Let the fire do its job for a while.
For this recipe, we use a pan/ovenproof dish that we place on the grate. We personally use a cast-iron pan as shown in the photo.
What to do with the vegetables/ingredients:
Halve the bell peppers lengthwise, remove the seeds, and cut the peppers into large chunks. Cut the tomatoes into wedges. Peel and halve the onions and cut them into half rings. Peel and halve the garlic cloves.
Place the bell peppers, tomatoes, onion, garlic, bay leaves, and thyme in an ovenproof dish (or cast-iron pan), sprinkle lightly with sea salt, and drizzle with 50 ml of olive oil.
Back to your KLAUWE:
When the coals are hot and the highest flames have died down, move the fire basket with the lifting hook (and barbecue gloves) to the lowest level. Place the grill grate on level 2. Then put the lid on your KLAUWE. (We grill without a water ring and without a water tray.)
The air vents at the front and back are still open. Watch where the temperature goes. The goal is around 200 degrees Celsius. If the temperature goes beyond 200 degrees Celsius, close the rear vent completely. If it continues to rise, close the front vent a bit. Eventually, you can fine-tune the temperature with the front vent. If the temperature is too low, open the front vent more. If it’s too high, close the front vent a bit more.
Take your time with this. The temperature needs to stabilize. Do this, of course, with a suitable drink in hand.
Lid closed and pan on the fire:
The temperature is stable at 200 (or close to) degrees Celsius. Place the pan with ingredients on the grate and close the lid. To maintain the stable temperature, keep the lid on your KLAUWE.
To add extra smoke flavor, you can add some wood chips directly to the coals. Use the rear air vent for this.
Tip:
For better smoke development, close the front air vent and the lid vent. This will smother your KLAUWE. Add the wood chips through the rear air vent to the burning coals (don’t forget to close the rear vent afterward). Wait about 4 minutes (the temperature will drop slightly, which is fine). This reduces the fire and prevents the wood chips from burning. After 4 minutes, open the front air vent and lid vent back to their original positions. Your KLAUWE will smoke like crazy!
Leave the pan with vegetables in your KLAUWE for about 20-25 minutes until the vegetables are soft and slightly colored. The mixture will bubble nicely.
The Next episode:
After 20-25 minutes, remove the ovenproof dish/pan from the grill grate and bring it to your (outdoor) kitchen. Remove the thyme sprigs and bay leaves from the pan. They’ve done their job.
Pour the entire contents of the dish/pan into a blender or use an immersion blender in a bowl. Puree the mixture until smooth.
Then pour the thick soup through a fine sieve into another pan filled with the broth.
Strain the thick soup carefully and patiently, as it might take some time for all the liquid to pass through the sieve. Once done, place the pan on the fire and let it simmer gently (the broth needs to warm up as well). Adjust the seasoning with a bit of sea salt and freshly ground pepper if necessary.
Serving Your Bell Pepper Tomato Soup:
The above quantity serves approximately 4 people. Divide the soup into 4 bowls. Add a few small thyme leaves on top for garnish. Presentation matters too!
