A clean BBQ is a better-performing BBQ. Regular maintenance keeps your smoker drum cooking efficiently, ensures food safety, and extends its lifespan by years. The good news is that cleaning a drum smoker is straightforward, especially if it is built from stainless steel. This guide covers everything from the quick clean-up after every cook to seasonal deep cleans.

After Every Cook: The 10-Minute Routine

The best time to start cleaning is right after you finish cooking, while the BBQ is still warm. Heat makes grease and food residue much easier to remove. Build this quick routine into every cooking session and you will rarely need an intensive deep clean.

Step 1: Burn Off Residue

Once you have removed your food, close the lid and open all vents fully. Let the remaining coals burn hot for 10–15 minutes. This intense heat carbonises grease and food particles on the grates, turning them to ash that is easy to brush off.

Step 2: Brush the Grates

Using a stiff wire brush or grill brush, scrub the grates thoroughly while they are still warm. For stainless steel grates, a brass-bristle brush is ideal as it is effective without scratching the surface. Work in the direction of the grate wires for the best result.

Step 3: Empty the Ash

Once the BBQ has cooled enough to handle safely (but ideally while still slightly warm), remove the ash. For drum smokers like the KLAUWE BBQ & Smoker Drum, this typically means removing the charcoal grate or opening the ash cleanout. Tip the ash into a metal bucket — never plastic, as embers can remain hot for hours. Allow ashes to cool completely before disposal.

Step 4: Wipe the Interior

Use a damp cloth or paper towels to wipe down the inside walls of the drum. You do not need to remove every trace of darkening — a thin layer of seasoning on the interior is actually beneficial, as it helps prevent sticking and adds subtle flavour. Focus on removing drips and pooled grease.

Monthly Deep Clean: Keeping Everything in Top Shape

Once a month during your grilling season (or after every 8–10 cooks), perform a more thorough cleaning. This keeps grease from building up to levels that can cause flare-ups or produce off-flavours.

Remove and Soak the Grates

Take out all grill grates, plancha plates, and accessories. Soak them in hot water with a squirt of washing-up liquid for 20–30 minutes. This loosens baked-on grease and makes scrubbing much easier. For stubborn buildup, make a paste of bicarbonate of soda and water, apply it to the grates, and let it sit for 15 minutes before scrubbing.

Scrub the Interior Walls

With the grates removed, you have full access to the drum interior. Use a plastic scraper or wooden spatula to remove any thick grease deposits. Follow with a cloth dampened in warm, soapy water. For stainless steel drums, you can use a stainless steel cleaner for the exterior to maintain the shine.

Clean the Vents

Airflow is everything in a drum smoker. Check that all intake and exhaust vents are clear of ash and grease. Use a pipe cleaner, small brush, or compressed air to clear any blockages. Sticky vents mean poor temperature control, so this step is important.

Inspect Seals and Hardware

While cleaning, check any handles, hinges, and latches. Tighten anything that has loosened. If your drum has gaskets or seals, inspect them for wear. On a stainless steel drum like the KLAUWE Premium, there are fewer parts to worry about, but a quick check keeps everything functioning smoothly.

Stainless Steel Care: Special Considerations

Stainless steel is remarkably low-maintenance, but a few tips will keep it looking and performing its best:

  • Clean with the grain: Stainless steel has a brushed grain direction. Always wipe and scrub along this grain, not against it, to avoid visible scratches.
  • Avoid chlorine-based cleaners: Bleach and chlorinated cleaners can damage the chromium oxide layer that gives stainless steel its corrosion resistance. Use mild detergent, vinegar, or dedicated stainless steel cleaners instead.
  • Remove water spots: After washing, dry the surface with a clean cloth to prevent water spots, especially in hard-water areas.
  • Treat discolouration: Heat can cause golden or blue discolouration on stainless steel. This is purely cosmetic and does not affect performance. A paste of bicarbonate of soda and water, rubbed gently along the grain, can reduce it.

Seasonal Storage: Preparing for Winter

If you are putting your smoker drum away for an extended period (though we encourage winter BBQ too!), a few steps will ensure it is ready to go when you bring it out again:

  1. Perform a full deep clean as described above.
  2. Ensure the drum is completely dry inside and out.
  3. Leave the vents slightly open to allow air circulation and prevent moisture buildup.
  4. If storing outdoors, use a breathable cover. Avoid plastic tarpaulins that trap moisture.
  5. Remove any batteries from igniters or thermometers.

What NOT to Do

  • Never use oven cleaner inside your BBQ. These harsh chemicals can damage metal surfaces, leave toxic residues, and strip beneficial seasoning.
  • Never pressure-wash your BBQ. High-pressure water can force moisture into joints, vents, and insulation where it causes hidden corrosion.
  • Never burn off at maximum heat for extended periods just for cleaning. A 10–15 minute burn-off is sufficient. Prolonged extreme heat can warp even quality steel.

A Clean BBQ Is a Happy BBQ

Regular cleaning is a small investment of time that pays off in better-tasting food, safer cooking, and a BBQ that lasts for years. Make the post-cook brush and ash removal a habit, schedule monthly deep cleans during the season, and your smoker drum will reward you with consistent, delicious results every time you fire it up.
