A drum smoker is one of the simplest and most effective ways to grill and smoke food. If you have just bought your first drum smoker — or you are considering one — this guide walks you through everything from the first light to your first perfect meal.

What Is a Drum Smoker?

A drum smoker (also called a barrel BBQ or vertical smoker) is a cylindrical charcoal cooker. Food sits on grill grates above a charcoal fire at the bottom. The vertical design creates natural convection: heat and smoke rise through the food, giving you excellent flavour with minimal effort.

Step 1: Set Up Your Drum Smoker

Place your drum smoker on a level, heat-resistant surface — stone, concrete, or packed earth. Avoid wooden decks unless you have a fire-resistant mat underneath. Ensure good ventilation around the drum.

Step 2: Light the Charcoal

Use a chimney starter or natural firelighters to light your charcoal. Avoid lighter fluid — it leaves chemical residue. For the KLAUWE, fill the fire basket with quality hardwood charcoal (not briquettes for your first cook — lump charcoal is easier to control).

Wait until the coals are covered with a thin layer of white ash (about 15-20 minutes). Then spread them evenly in the bottom of the drum.

Step 3: Control the Temperature

Temperature in a drum smoker is controlled by airflow. More air = higher heat. Less air = lower heat.

  • High heat grilling (200-300°C): Open the air vents fully. Great for steaks, burgers, and vegetables.
  • Medium heat (150-200°C): Half-open vents. Perfect for chicken, sausages, and most everyday grilling.
  • Low-and-slow smoking (100-130°C): Nearly closed vents. Ideal for ribs, pulled pork, and brisket.

Step 4: Place Your Food

For direct grilling, place food on the lowest grate closest to the coals. For smoking, use a higher grate and add wood chunks (cherry, hickory, or oak) to the charcoal for smoke flavour. The Multi-Level Cooking System lets you cook different items at different temperatures simultaneously.

Step 5: Monitor and Relax

One of the joys of a drum smoker is how little intervention it needs. Once you have dialled in your temperature, the drum holds it steady for hours. Check every 30-45 minutes, adjust vents if needed, and enjoy the process.

Your First Cook: Keep It Simple

For your very first cook, try something forgiving:

  • Chicken thighs — hard to overcook, great with any rub
  • Sausages — simple and satisfying
  • Vegetables — peppers, courgettes, corn on the cob

Season simply with salt, pepper, and olive oil. Cook at medium heat (around 180°C) for 25-35 minutes. You will be amazed at the flavour difference compared to a gas grill.

Tips for Success

  • Always preheat your drum for 10-15 minutes before placing food
  • Keep the lid on as much as possible — every time you open it, you lose heat and smoke
  • Invest in a good probe thermometer to check internal meat temperatures
  • Clean your grates after each cook with a brush while still warm
